Hannah's Lemon Squares


Ingredients
  • 1 cup flour

  • 1/2 cup butter, softened

  • 1/4 cup powdered sugar

  • 1 cup sugar

  • 2 eggs

  • 1/2 tsp baking powder

  • 4 tbsp lemon juice + the grated rind of the lemon


Directions

Preheat the oven to 350°

Place the flour, butter and powdered sugar in a medium sized bowl and cream together with clean hands. Once the dough has come together (the butter thoroughly mixed in) press it into the bottom of an 8×8�? pan, letting it come up a bit on all sides. Place in the oven on a middle rack and bake for 20 minutes, do not let it brown too much. Remove and set aside.

In another medium sized bowl beat until fluffy the eggs, sugar, baking powder, lemon juice and rind. When this mixture is ready, pour it into the pan over the crust and bake again for another 25 minutes. Remove and let cool completely. Once cool, sprinkle with a bit more powdered sugar and serve either from the pan or arranged on another plate.
