Francie's Fancy Olive Oil Cake


Ingredients
  • 1 1/2 cups all-purpose flour

  • 1 1/2 tsp baking powder

  • pinch salt

  • 1 cup sugar

  • 3 large eggs

  • 2 tsp lemon zest

  • add orange zest if desired

  • 1/4 cup milk

  • 3/4 cup olive oil

  • 1/2 cup sliced almonds, toasted, coarsely crumbled

  • powdered sugar, for top


Directions

Preheat the oven to 350 degrees F. Lightly oil a cake pan. Whisk the flour, baking powder, and salt in a medium bowl to blend. Using an electric mixer, beat the sugar, eggs, and zests in a large bowl until fluffy. Beat in the milk. Slowly beat in the oil.(very slowly)

Add the flour mixture and stir until blended. Stir in almonds. Transfer the batter to the pan. Bake about 35 minutes, until toothpick comes out clear. Cool for 20 minutes. Sift powdered sugar over the cake.
