Olive's Favorite Vinaigrette
Ingredients
2 parts high quality organic olive oil (preferably first cold pressed)
1 part balsamic vinegar
1 tablespoon stone ground country mustard
1 tablespoon honey
To taste salt and pepper
Directions
Add all ingredients into a small glass bowl and whisk together until just combined. Use over salad immediately. If making ahead of time, cover with plastic wrap and place in refrigerator. Make sure to remove it at least a half hour before using to bring it back to room temperature and whisk it one more time before pouring over the greens. This is also tasty over grilled vegetables!
