Pinto Bean Soup


Ingredients
  • 2 cups dried pinto beans

  • 2 qt water

  • 1 small onion, quartered

  • 1 tsp salt

  • Pepper, to taste


Directions

Tip: When buying dried pintos, look for beans that are lighter in color. These tend to be more tender.

Rinse beans in a colander and sift through for any rocks. Transfer beans to a heavy stockpot. Add water, salt, pepper, and onion. Bring to a boil, then reduce heat to medium low. Let simmer for 4-5 hours, or until beans are very tender.
