Olive and Peach

Granny Smith Apple Cake


Ingredients
  • 3 cups all-purpose flour

  • 2 cups sugar

  • 1 tsp baking soda

  • 1 tsp salt

  • 1/2 tsp cinnamon

  • 3/4 cup canola oil

  • 1/2 cup milk

  • 3 eggs

  • 1 tsp vanilla extract

  • 3 Granny Smith apples, peeld, cored and diced

  • 1 cup chopped walnuts

  • 1/2 cup raisins (optional)

  • Lemon glaze


Directions

Preheat oven to 350 F.

In a large bowl, beat oil, milk, eggs, and vanilla. Set aside. In a medium bowl, mix flour, sugar, baking soda, salt, and cinnamon. Slowly add the flour mixture to the oil mixture while beating, until blended.

Fold in diced apples, nuts, and raisins.

Pour batter into a greased and floured bundt pan. Bake for one hour and fifteen minutes, or until cake tester or toothpick comes out clean. Cool cake on a wire rack for ten minutes. Remove cake from pan and let cool completely. Drizzle with lemon glaze.

Lemon Glaze


Ingredients
  • 1 cup confectioner’s sugar

  • 2 Tbsp lemon juice


Directions

Blend all ingredients together until smooth. Spoon over the top of the cake.
