Olive and Peach

Khyar bil-Laban (cucumber-yogurt salad)


Ingredients
  • 1 tsp salt

  • 1 clove garlic, small

  • 3-4 stems and leaves of fresh mint

  • 1 quart plain yogurt (we suggest fresh yogurt from a local dairy as it tastes best. If this is not available chose an organic brand from your local grocery store)

  • 2 cucumbers


Directions

Mash garlic with salt and fresh mint in a bowl Add yogurt blending well. Peel and cut cucumbers in half lengthwise, then slice in thin half-rounds. Add cucumbers to yogurt mixture. Mix together gently. This is especially tasty when served along with tabbuli and hummus it can also be a great accompaniment to a grilled or baked salmon.
